Subject: It's Zucchini Time

Anyone have any good recipes for our flourishing zucchini plants? I love breaded and fried zucchini but it does take a long time and kind of a mess so tried this one.
Zucchini Fritters
Shred zucchini and an onion in food processor
mix can be a little chunky for nice texture
Add and egg and flour to make a pancake texture.
Mix in 1/2 cup parmesean cheese if desired
Salt and Pepper.
Make patties and fry in little oil.
Drain on paper towel. I have also put a potato in when shredding the zucchini and onion. Gives it a little bulk but just as good without.
