Subject: Squash Casserole

4 to 6 small yellow crookneck squash
cooking spray/oil
salt and pepper to taste
1 large onion, chopped
2 cups shredded cheddar cheese
2 cups saltine crackers crumbs ( 1 sleeve crackers crushed)
1/2 stick butter
1 12oz can evaporated milk

Cut squash into 1/8 slices.
Coat glass casserole dish and
lid with oil ( use foil if you don't have a lid.)
Layer bottom of dish with squash slices
then onion, then cheese, end with cracker crumbs.
Repeat layers until full.
Put pats of butter on top and pour
evaportated milk over contents.
Put on lid and bake for
1 hour. Increase heat to 400 and bake uncovered for 10 minutes.
