1 CLOVE GARLIC, SPLIT
SALT AND GROUND PEPPER, TO TASTE

ADD GARLIC TO STOCK AND SALT TO TASTE.
BRING TO A BOIL

ADD GREENS AND SIMMER FOR 5 MINUTES

6 CUPS SHREDDED ESCAROLE, ROMAINE, OR FRESH SPINACH

2 EGGS
1/4 CUP GRATED PARMESAN CHEESE
1/4 CUP FINELY CRUSHED PORK RINDS

BEAT EGGS AND MIX IN THE PARMESAN CHEESE AND PORK RIND CRUMBS.

JUST BEFORE SERVING, ADD EGG MIXTURE GRADUALLY TO SIMMERING SOUP, AND WHEN IT SETS," STIR GENTLY AND SERVE.
