2 cups sugar
1 tablespoon cornmeal
1 tablespoon all purpose flour
4 eggs
1 teaspoon vanilla extract
1 stick melted butter or margarine (not spread)
1 cup shredded or flaked coconut
1 cup crushed pineapple, drained
1 9in unbaked pie shell
In large bowl, combine sugar, cornmeal, flour, eggs, vanilla
and butter; mix well. Stir in coconut and pineapple.
Pour into pie shell and bake at 350' until golden brown.
1/c cup of chopped pecans may be added to make a different
tasting pie.
