Subject: Rice Pudding

4 cups milk
3 cups cooked white rice
2/3 cups sugar
1/2 teaspoon salt
1 package cream cheese
2 eggs
1 teaspoon vanilla (pure is superior to artifical)

Combine 3-1/2 cups of the milk with the rice, sugar, and
the salt. Bring to a boil over med. heat and cook for
15 minutes. Stiring occasionally. In separate bowl,
beat cream cheese adding eggs and the rest of the milk.
Pour slowly into the rice mixture. Place in baking dish
and bake at 350' until center of pudding is 160', usually
about 25 minutes.
