Subject: Original Hershey's Chocolate Chip Cookie Recipe

From 1930's Hershey's cookbook and they are better than Toll House. The dough can be frozen.

1 cup butter, softened (no margarine)
3/4 sugar
3/4 cup packed light brown sugar
1 teaspoon real vanilla
2 eggs
2 1/4 cups unsifted all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi sweet chocolate chips (If kids help we use a lot more)
1 cup chopped nuts (optional)

Cream butter, sugar, brown sugar and vanilla in large bowl until light and fluffy. You can't cream too much so spend a lot of time creaming the mixture as this is what makes or beaks a cookie recipe. Add eggs; beat well. Combine four, baking soda and salt; gradually add to creamed mixture. Beat well. Stir in chips and nuts. Drop by teaspoonfuls on to cookie sheets lined with parchment paper. Bake at 375' for 8 -10 min or until lightly brown. Cool slighly, remove from cookie sheet and then cool completely on wire rack.

I have found that by using the parchment paper my cookies rise so much better and have a golden color instead of brown bottoms and edges. I use it for baking biscuits and pizzas too.
