Subject: Sardine Hot Pockets (Some people like sardines)

SARDINE Hotpockets




Ingredients:

Pastry:
3/4 cup Flour
1/4 lb softened Butter
1/4 lb Cream Cheese
pinch of Salt

Filling:
2 tins Sardines in oil
1 tsp. Curry Paste or Powder
1 Tbsp Parsley, finely minced
1 tsp finely grated Zest of Lemon
Juice of 1 small Lemon
pinch of Salt
Pepper to taste

Method:


Cream the butter and cheese together well. Sift in the flour and salt. Mix well, then knead briefly into a flat disc. Chill for 1 hour.

Meanwhile, drain the sardines, reserving the oil. Mash together the sardines and all the remaining filling ingredients, adding the reserved oil a little at a time. Mixture should be moist, but not soupy, so add oil from the sardines carefully, as all the oil may not be needed.

Roll the pastry thinly. Cut into circles and put a good teaspoon of sardine mixture in each ring. Fold over and pinch pastry together at the top of each circle so that the sardine mixture shows at each end.

Bake for about 15 minutes at 375 degrees F.
