Fabulous Taco Bell Enchiritos

1 lb. very lean ground beef (90% lean)
1 pkg. Taco Bell taco seasoning mix
3/4 cup water
1 lb. shredded Cheddar cheese (divided)
5 burrito size flour tortillas
2 cans red enchilada sauce (Old El Paso)
1 small chopped onion
1 small can sliced black olives, well drained

Brown meat in nonstick skillet over medium heat, breaking into small bits. Add seasoning mix and water. Stir well and cook till most of the liquid is reduced.
Spread some of the enchilada sauce on each tortilla to within 1 inch of the edges. Sprinkle with some onion. Scoop some of the meat down the center of each tortilla, piling it high. Leave at least 1 scoop of meat in the skillet to be put over the top of the tortillas later. Spread some cheese over the meat. (Use half the cheese for the tortillas and half for the top, as described below).
Roll each tortilla tightly and place seam side down in a greased casserole dish. Pour the rest of the sauce over all the enchiritos. Sprinkle with the olives, the leftover meat from the skillet and the rest of the shredded cheese.
Bake at 350º for 20-25 minutes, till the cheese is very melted.
