Subject: Keep blueberries blue

If blueberries cooked in muffins or pancakes turn an ugly greenish brown color, it's likely caused by the use of baking soda in the batter. It creates an alkaline conditions that affects the color of blueberries. Baking soda generally is used in baking to counteract an acid, such as buttermilk or yogurt. to prevent such instances of discoloring, use plain milk instead of buttermilk and replace the baking soda with baking powder: 1 teaspoon baking powder for every 1/2 teaspoon of baking soda.

Does anyone know a way to prevent blueberries from turning reddish purple when cooked, or is that just inevitable? What's the chemistry here?

The only blueberries I've found that don't turn a dark color are the artificial ones in packaged mixes.
