Subject: Apple pie made with no apples

Mock Apple Pie


Pastry for a double-crusted 9-inch pie
2 cups water
1 1/4 cups sugar
2 teaspoons cream of tartar
20 single-stack, square soda (saltine) crackers (regular, salted) or Ritz crackers
Butter ( 1/4 to 1/2 stick for dotting)
Ground cinnamon or cinnamon sugar (for sprinkling)

Preheat the oven to 375 F. Line the bottom of a 9-inch pie pan with pastry. In a pot, boil water, sugar and cream of tartar, stirring until all of the sugar is dissolved. Add the whole crackers one at a time (do not break up) and boil only 1 minute. Spoon the mixture gently into the pie shell, dot the top with butter and sprinkle on the cinnamon to taste. Now, cover the pie with the top crust and cut several vents. Bake in the preheated oven for 35 minutes. Let the pie cool completely so that it becomes firm before cutting the first slice.

I didn't bother with a crust at all-I just dumped it into a greased 8 X 8 pan and baked it. Also, I sprinkled some brown sugar on top. It really does taste like apple pie.

I make this all the time and it is delicious. I took to church and everyone thought it was an apple pie
