By "texture maker", I'm assuming you mean the Surface Map controls in the Landscape dialog, right? If so, it's really rather straightforward. You can accept the default surface map, of course, but if you want to change surface maps, you just click on Open and select one. Let's say you've selected the Grass and Snow map. If you now want to change the ratio of grass to snow, you can easily do so by clicking on Distribution Settings, then, in the dialog that opens, you can adjust various sliders and checkboxes and observe the effect in realtime. I like to use the Grass and Snow map to create artic snow scenes, myself. To do this, I simply slide the Overall Surface Distribution slider all the way to the right, first. Then, I slide the Slope - Determined By Terrain slider, labeled Effectiveness, all the way to the left. This gives me a surface map that is nearly all snow. The best way to learn how to use these settings is to simply experiment.
