Subject: Carribbean-style chicken

4 bone-skin, skin-on chicken breast halves
1/2 cup lemon juice
3 cloves garlic,crushed
2 oranges,zested
2 tbls.chopped fresh parsley
2 tbls.fresh thyme
4 tsps.jalapeņo hot sauce
1/2 cup olive oil
1 cup chicken stock

1.In medium bowl,mix together lemon juice,garlic, orange zest,
parsley,thyme and hot sauce.Place chicken breasts in bowl; cover
and marinate in refrigerator 30 minutes.
2.In large saucepan over medium-low heat,warm olive oil. Place
chicken in pan and cook,turning once,for 5 minutes.Add chicken
stock to pan,cover and cook 10 minutes more,turning once. Remove
cover and cook additional 10 minutes.Remove chicken from heat and
allow to cool.
