Subject: Marinara Sauce

3 cups coarsely chopped onion
1/2 cup vegetable stock or water
2 cloves garlic,minced
1 1/2 cups diced carrots
4 cups chopped tomatoes
1 teaspoon sugar
2 tablespoons freshly chopped basil
2 tablespoons freshly chopped Italian parsley
Salt
Freshly ground black pepper

Braise the onions in the vegetable stock until translucent. Add the garlic
and cook for about 1 minute.Add the carrots,continue cooking for ab
out 5
minutes and then add the tomatoes and sugar.Cover and simmer over low to
medium heat for 20 minutes,stirring occasionally.Add the basil and
simmer,
uncovered,for another 10 minutes.

Transfer the sauce to a food processor,blender or food mill and puree.If
you prefer a chunkier sauce,puree only part of the sauce. Add the parsley
and salt and pepper to taste.Serves four.

Note:You may add your choice of fresh mushrooms when you add the tomatoes.
