Subject: CARIBBEAN GARDEN BURGER

1/2 cup mixed julienne of red bell peppers, carrots, zucchini and red onion
2 tablespoons vegetable oil
1 purchased garden burger
1 tablespoon Jerk Spread (see recipe)
1 whole-wheat bun

Saute the vegetables in oil until just softened. Cook the burger according
to package directions.

Build the burger with jerk spread, cooked vegetables, burger and bun. Serves
1.

JERK SPREAD

4 tablespoons purchased jerk sauce, or as needed
1/4 cup diced white onion
1 garlic clove, peeled
1/4 cup diced bell pepper
1/4 seeded jalapeno pepper

Combine all ingredients in a food processor and pulse until the mixture
becomes a paste, adding more jerk sauce to smooth it out if needed.

Yields enough for 4 burgers.
