Subject: Ginger Cookies

1 Egg

1 C Sugar

3/4 C Shortening

1 t Ginger

1 t Cinnamon

4 T dark Molasses

1/4 t Salt

2 C Flour(All-Purpose)

2 1/2 t Soda

Mix egg,sugar,shortening(I use half margarine and half Crisco),spices and molasses.Stir in flour and soda.Add more flour if dough seems too soft...also working with a chilled dough is easier.Form dough into small balls.Roll in sugar, but do not flatten.Bake at 350-375 degrees for 10 -12 min. Cookies will puff up.Take out just before they start to flatten again.While warm frost with powdered sugar frosting.People always ask me for my recipe when I furnish these cookies.You can vary the crispiness by the amount of flour you add and the time you bake them.
