There is one rather pricey brand of German sauerkraut that we can get here and the sour it has is very good, but with a hint of sweet. I have read the label and do not see any added sugar or dextrose, so does your homemade kraut have a sour that has a bite to it or just a gentle sour?
I know, it is a matter of personal taste...but would that also depend on the cabbage as well as the salt used?
