There is free potable water during the operating season at the state park on the summit and at the AMC hut. There is water at Lakes of the Clouds and at Red Pond at the col N of Eisenhower (and a pond on the Monroe bypass posted to protect rare plants if you can't reach the hut and are desperate). There are springs in the Pierce-Eisenhower col and on the cone of Mt Washington, see the Washburn map. Of course with the heavy hiker traffic all natural water should be treated.
