My hands-down favorite overdub is the fast version of Little Richard's "Slippin' and Slidin'" as overdubbed by Norman Pettty and the Fireballs. Why? It rocks!!! Much has been said and written about the slow version, such that the fast version is seldom discussed. The fast version demo is short and sweet, so short that it is repeated/doubled in the overdubbed version. The overdubs were well-produced on this demo, electric guitars in sync with Buddy's acoustic, etc. - if a fan didn't know any better, they might not realize it is an overdub just from listening to it.
I used to wonder why Holly sang, "Ol' big conniver, nothin' but a CHILD, done got hip to your jive," but realized that it was probably Buddy hearing "child" where Little Richard sang "jiver" on the original recording.
