1. I think that, the last couplet altered the complete meaning of the sonnet. At first it seemed like he was flattering her, and saying how great she was, then after those last lines it comepleatly does a 180 on the meaning and says even though her lips aren't as red as a rose, or breasts as white as the snow, and such I love her anyways and nobody else can compare because of my amount of love for her.
2. Because normaly sonnets describe people women or men who are beautiful and lovley and this and that, and here Shakespeare is describing a person that isn't pretty or perfect. So by writing about a woman who is the complete opposite of the norm it's mockin the traditional way to write a sonnet and the subject of these sonnets.
