I think it always depends on how much focus an original character takes from the canon characters. I've not seen enough Samurai Jack to be sure here, but I doubt there would be anything wrong with a new character who meets up with Jack, teams up with him for a while, they fight some evil and then either the OC's story is ended or he dies. I think I've seen this on the show a few times in fact. This seems pretty reasonable given the style of the show.
On the other hand, an incredibly powerful OC that kicks down the door to Aku's throne room/wherever and beats him in five mins flat would probably be a Sue. Especially if Jack's role in the fic was basically to carry the OC's swords.

Anyway, if you've made many varied OC's it's probable that none of them are Sues. The whole point of Sues is that they're the Author. If your characters weer Sues they would all be the same, or you would only be able to make one and would fixate on it.
