I believe this is covered in the Dune Blog, but in between they wrote "Dreamer of Dune" or more to the point Brian wrote this book.

I too thought that we were to have Dune 7 now known ad Hunters of Dune on or around September 7.

I also believe, but may be wrong that the book was a lot longer then originally thought (thus the two books, Hunters of Dune and Sandworms of Dune).

When you have a book that is this anticipated by Dune fans you better get it right, and I think by taking the extra year they were ensuring that.
