Hi

Here are some recipes. I cook by the seat of my pants, so measurements are approximate.

Crock Pot Lasagna

2lbs. ground meat (beef, chicken, turkey, sausage)
2 jars of Spaghetti Sauce
1 box lasagna noodles broken into bite size pieces
Large carton ricotta or cottage cheese
2 ln. shredded mozarella

Brown the meat and drain. Add sauce and heat. Put a small amount in the bottom of the crock pot (spray with PAM first).Layer as follows: noodles, sauce ricotta/cottage, mozarella, ending with cheese on top. Cook on high for 4-5 hours or Low 6-8. (I often add seasonings to the cottage cheese)

Chicken Lickin Crock Pot

8 chicken pieces
1/2 tsp ground ginger
1/2 tsp chili powder
2 T butter
16 ozs tomatoes
1 large onion chopped
4 oz. sliced mushrooms drained
1 clove garlic minced
1 1/2 tsp salt
1/2 c heavy cream
2 tsp paprika

Rinse chicken, pat dry. Melt butter in skillet and brown chicken on both sides. Put chicken in CP. Combine other ingredients except heavt cream. Cook on low 8-10 hrs (less of boneless chicken). Stir in cream just before serving over spaghetti.

Most of the time I just do chicken like I would in the oven.I usually buy those frozen boneless chicken breasts or tenders from Wal-Mart. I just spray the crock with Pam, and put them in frozen. Then I season, BBQ sauce, maybe Teriyaki Sauce, sometimes just spices. Sometimes I do thaw them in the microwave before I put them in, so they don't get too "soupy".

Another favorite here is Polish Sausauge soup:

1 package Polish Sausage (can use turkey or low fat) cut into 1 inch pieces
1 package frozen stew vegetables
1 Large can of tomato juice

Spray the crock, put in the sausage pieces, veggies and tomatoe juice. Cook on low for 6 hours. You can vary this by adding leftover veggies from your fridge or using V-8 or spicy sausage.

Another chicken dish - no name (LOL)

4 boneless chicken breasts
1 pacakge Mahatma Saffron Rice Mix
1 can cream of mushroom or cream of chicken soup
2 cans chicken broth

Spray crock, put rice mix on bottom, layer chicken. Mix together can of cream soup and 1 can of broth. Pour over all. Cook on low for 6-8 hrs. Check at about 4 hours - if the mixture is getting dry, add more broth. The rice comes out kind of like orzo, but it sure tastes good.

Healthy Crockery Cookery by Mabel Hoffman (This one is more "gourmet" LOL)

Any of the recipes can be adjusted using low fat, no fat items. I often take regular recipes and make them in the crock, just making sure to adjust the liquid as it cooks.

Our last favorite - Chicken and Dumplings:

4 boneless chicken breasts
1/2 cup frozen peas and carrots
small onion diced
1 clove garlic, minced
3 cans chicken broth.

Add all to crock and cook on low until 1 hour before meal time. I make my dumplings with Bisquik and drop them in. Cover and let cook on low until serving time. You can thicken the sauce with cornstarch.

I have to get my pizza dough recipe, I'll post it later.
