Subject: Newbie TT bike question, hydration on TT

Greetings Forum! Two questions. After watching a local time trial (central Maryland), I became intrigued and have strongly considering jumping into this discipline. But, I'd like to know if I could still use a TT bike for regular group/solo riding in the rolling hills/mountains in my area. Most of us have other lives and responsibilities, and mine probably won't allow/understand 2 road-type bikes.

Hydration: I wasn't clear after reading an article what the best method for staying hydrated was. I could see that drinking from a water bottle would distract you and also cut down on your aerodynamics. But, going 40K without drinking something once in a while would seem to cut down on your performance. What's the best solution?
