As I recall, ASH had requested to have his role reduced because he wanted to be able to spend time with his family in England. In particular he wanted to be there while his daughters were growing up. So it was agreed that he would only be doing a certain number of episodes and this allowed him to come for specific time periods to tape them.

Not sure what his role would have been, but if it hadn't been for the real life issues that were the real reason for his going, I, for one, don't believe Giles would ever have left after Buffy revealed what she'd been hiding from everyone in OMWF.
