I also think the fact that if it's all in her head then she has also bothered to make a whole world for Angel that she does not participate in or act upon having any awareness of. i.e the fact that Angel has his own set of adventures away from Buffy disproves the theory it's all in Buffy's head along with what we see in the series that doesn't involve her like Tara is around for a while before being introduced to Buffy and Riley's bitey addiction which goes on for a while before Buffy is aware of it etc.
