Gear size is a very difficult question to answer, I ride Wrynose and Hardknott a number of times each year and have managed both on 39x27 quite comfatably. The big difference is these climbs are 20 miles into my ride. On the Fred they are 100 miles into the ride and my legs are usually gone and I end up walking... Therefore the question isnt so much what gear do I need for Hardknott but how tired will I be when i get there?!
Honister pass after 50miles is as steep are Wrynose but doesnt seem anywhere near as hard...39x27 no worries..
