Subject: Two part question

I am getting ready to do a first year doe that my nephew's daughter shot. My questions are these.
The deer being so young and shot in early sept. in NJ has really, really short fine hair. Should I do a y incinsion to remove the cape or is there an alternate method that should be done???
Also, when sewing what would be the best method so I dont have stiches and a seam showing.
I have done a lot of deer but have never had to deal with one with such short fine hair and im concern that the stitching is going to look lousy.
