Subject: Dr. John Heard's Pepper Steak

Dr. John Heard, who is AKA Chef Johann shared this recipe. It is a culinary delight.

Pepper Steak
½ pound chuck steak or top round sliced into thin strips
ground ginger (1 scant teaspoon, more or less to taste)
2 large bell peppers cut into bite-size chunks
1 medium onion, sliced
2 cloves garlic, sliced
sesame oil or peanut oil (approximately 2 tablespoons)
½ cup beef broth
¼ cup medium dry sherry
2 tablespoons soy sauce
½ cup water
1 rounded teaspoon cornstarch

Add enough soy sauce to water and cornstarch to make a dark tan mixture.

Heat oil in heavy pan; when it is hot, add beef strips and ginger, cook until beef strips and ginger, cook until beef is browned on the outside.
Cut peppers and onion into chunks and add to beef.
Add sliced garlic. Cook for 5 minutes.
Add sauce of beef broth, sherry, soy sauce, and Worcester sauce. Stir.

While mixture cooks, mix water, cornstarch, and soy sauce, stir into beef and vegetable mixture. Continue to cook until sauce thickens. Serve over hot rice.

Serves 2.
