Subject: Low-Calorie Tasty Food

In my closet there are scads of pretty clothes that are too tight. It’s time to start cooking some tasty, low-calorie dishes.

Here is something we enjoyed for lunch today. It is possible to enjoy the robust flavor without consuming bulky calories. Whole kernel corn, an excellent source of fiber, has only 73 calories per half cup.

The dish is easy to prepare and requires only 8 minutes cooking time.

Collard Corn
(Deep saucepan, cutting board, sharp knife)
1 medium onion
1 clove garlic
1 tablespoon extra virgin olive oil
2 cups frozen chopped collards
2 cups frozen whole kernel corn
1/8 teaspoon baking soda
1 tablespoon Splenda®
1/4 cup lemon juice
1 tablespoon chili powder

1. Peel and chop the onion.
2. Cut the end off 1 clove garlic, microwave it 30 second on high, and push the toes out onto the cutting board. Slice them.
3. Sauté the onions and garlic in the olive oil (3 minutes).
4. Toss the other ingredients into the pan and sauté until the collards are tender and the lemon juice is absorbed (5 minutes).

Yield: 4 generous servings

Cooking hint:

Using a deep pan prevents spills on the stove.
