Subject: Talking Turkey

Mike, my son-in-law, along with the help of my daughter Christie, Thanksgiving table and the Christmas table with deep-fried turkey. Because of his secret sauce, it is the best deep-fried turkey in the world.

He has a cooker, which he fills with peanut oil or another light oil, such as safflower oil. He heats enough oil to dip the turkey all the way (about 4 gallons), but he leaves room at the top of the cooker so the oil won't spill over. Then he heats it to 375 degrees.

He sticks that injected turkey down into the hot oil and cooks it 3 1/2 minutes per pound, and then he cooks it a little more. He checks it in the thickest part to make sure the temperature has reached the one printed on the thermometer for poultry. Usually it takes about 45-55 minutes to cook the turkey.

BEFORE cooking it, he injects it (until it is very, very juicy) with a syringe. For the last two years, I've been watching Mike and Christie make their secret sauce. I thought I knew exactly how to make it, but I called them to be sure.

They were on their way to the LSU-Ole Miss football game. I let them think I'm rooting for LSU, and I suppose I am. I sort-of am. I went to Ole Miss the summer of my freshman year, and also I took a graduate course there. Since they have LSU blood in their veins, I don't remind them that I like Ole Miss.

Being in a good mood and expecting LSU to beat Ole Miss, they told me the truth about the sauce.

Mike's Secret Deep-Frying Turkey Sauce

Go to p. 171 of FLAVORED WITH LOVE. Make a batch of
"Tiger Tailgatin' Sauce"--the kind Mike makes for brisket.
1. Pour up 1 pint (2 cups) Tiger Tailgatin' Sauce into a sauce pan.
2. Add 1 entire stick of real butter.
3. Heat that until it melts.

Then inject that sauce into the turkey. Mike uses a syringe he acquired from a Cajun Injector set.

You won't believe what he puts in his sauce. I’ll post it in a separate message.

I really do want LSU to win today because this game may be C & M's last one to watch from season-ticket seats in Tiger Stadium.
