Thick enough it won't break easily (and thin stings more too), and as smooth as you can get it. A smooth switch just raises a welt and brings tears to the eyes. Each little knob on it can draw a pinprick of blood if it hand on the skin just right.

The ritual of harvesting them can be part of the experience - especially in spring when you can get new shoots that don't have thick rough bark and dont have lots of leaves and branches. But other than that, you might just buy rattan or synthetic canes instead.
