Italian cookies: I make these, they're very good and make alot.

2 cups white sugar
4 eggs
15 to16 oz. Ricotta cheese ( doesn't seem to come in 16 oz. container around here)
1 tsp. vanilla
1/2 tsp. salt
4 cups flour
1tsp. baking soda
1 cup margarine (softened)

Blend margarine and sugar until creamy. Add eggs, add ricotta and beat well. Add vanilla and salt. Last, add flour with baking soda and beat.
Drop by tablespoon or teaspoon on greased cookie sheet and bake at 375 for about 10 min. (give or take). They should lightly brown on the bottom, but the tops stay light.
