2 (1 ounce) squares unsweetened chocolate
1 (14 ounce) can sweetened condensed milk
3 cups flaked coconut
1 teaspoon vanilla extract
1 pinch salt
1 cup whole almonds


Directions
1 Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
2 In the top half a double boiler melt the chocolate and condensed milk, stirring frequently.
3 Pour the melted chocolate mixture over the coconut. Stir in the vanilla and salt. Mix well until the coconut is completely coated. Drop dough by teaspoonfuls onto the prepared baking sheet. Press one whole almond into the top of each cookie.
4 Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Check at 8 minutes as the bottoms tend to burn easily. Remove from oven and cool.

Coconut Balls

2 lbs. powdered sugar
1 (12 oz.) can sweetened condensed milk
1/2 cup chopped pecans
1 tsp. vanilla
2 cups coconut
1/4 cup butter; softened

Mix together all ingredients; chill. Form into 1-inch balls; chill
again on waxed paper lined cookie sheet. Dip in a chocolate coating.
Chill for another hour.

Coating

12-18 oz. semi-sweet or milk chocolate chips
2-3 Tbls. shortening

Melt chocolate & shortening over low heat; stirring constantly.
(use 1 Tbls of shortening for every 6 oz. of chocolate)

Easy chocolate coconut balls recipe
1 c melted butter
2 boxes powdered sugar


1 can eagle brand milk
1 lg bag or 2 sm bags flaked coconut
2 c chopped nuts

Mix together and refrigerate fo 12 hours. Form into balls. Melt 12 oz bag chocolate chips with 1/4 lb paraffin. Put in double boiler to melt and dip balls in the chocolate mixture.
