CHRISTMAS MINCE TARTS

¼ cup Weight Watchers Margarine
2 tbsp caster sugar
½ tsp vanilla essence
1 egg yolk
¾ cup S.R. flour
200g fruit mince

Use electric beaters to beat the margarine and sugar until light and creamy. Add the vanilla essence and egg yolk and beat until combined.Add the flour, and using a spoon, stir to combine. Shape pastry into a ball, cover with plastic wrap and refrigerate for 30 minutes.Preheat oven to 200 ºC. Coat 2 x 12 patty tins with cooking spray. Between 2 sheets of baking paper, roll out the pastry to 4mm thickness. Using a 5cm scone cutter, cut the pastry and line the prepared tins.Spoon the fruit mince into the pastry and bake for 12 - 15 mins or until pastry is golden. Cool completely in the pans before serving.

Serves 24 @ 1 POINT
