CHERRY BRANDY TRUFFLES

60g dark chocolate
¼ cup Weight Watchers Margarine
1 egg yolk
90g flaked almonds, toasted & chopped
125g chocolate melt buds, finely crushed
30g glace pineapple, finely chopped
30g glace cherries, finely chopped
1 tbsp brandy essence

In a double boiler, melt the chocolate. Cool slightly.Beat the margarine and egg yolk until light and fluffy. Stir in a ¼ of the almonds, the choc melt buds, pineapple, cherries & essence. Mix to combine.Shape tablespoons of the mixture into balls, roll in the remaining almonds, cover and refrigerate.

Makes 25 @ 1 ½ POINTS
