SANTA’S CHOICE TRUFFLES

18 shredded wheatmeal biscuits
3tbs Splenda
2tbs cocoa
¼ cup evaporated skim milk
½ tsp vanilla extract
1 tbs. shredded coconut, finely chopped

In a food processor, process biscuits into fine crumbs.Reserve 2 tbs.Add Splenda & cocoa to crumbs & process till just blended.Add milk & vanilla. Process until thoroughly mixed & moist.Refrigerate mixture for between 15 mins - 2hoursStir reserved biscuit crumbs into coconut.Divide chilled mixture into 24 balls & roll in crumbs.

MAKES 24 @ ½ POINT
