BRANDY FRUIT CHEESE LOG

40g sultanas
40g dried apricots, diced
¼ cup boiling water
250g cottage cheese
50g light cream cheese
1½ tbs brandy
2 tsp gelatine
3 tsp poppy seeds

Wash a 400g size tin.Line base & sides with non stick baking paper.Place fruit in bowl & cover with boiling water.Cool to room temperature. Drain, reserve liquid.Blend cheeses in food processor until smooth.Combine liquid from fruit with brandy in a small dish.Sprinkle over gelatine. Heat till dissolved.Combine with cheeses & stir in fruit.Pour into tin & refrigerate till set.Remove from tin & coat with poppy seeds.

SERVES 8 @ 1½ POINTS
