Chicken with Mango Sauce

1 tbsp olive oil
600g chicken breast, sliced into strips
1 mango
100g sour cream
¼ cup dry white wine
1 tbsp fresh chives, chopped


Heat oil in fry pan & cook chicken until browned. Remove from pan & keep warm.
Place mango flesh in food processor & process until smooth. Combine with sour cream, wine and chives in pan. Stir over heat until warm. Add chicken to coat.

Serve with rice or noodles...... but don't forget to add the points for this...

Serves 4 @ 3½ POINTS without rice
