PESTO

Makes about 225g
1 cup fresh basil
half cup fresh parsley
1 clove crushed garlic
25g pine nuts
half cup curd cheese
2 tbsp freshly grated parmesen cheese
salt and freshly grated black pepper

Process half the herbs, the garlic, pine nuts and curd cheese in a food processor until smooth.

Add the remaining herbs and the Parmesan, season to taste and process until all the herbs are finely chopped.

Curd cheese is an american term for cottage cheese. Could possibly use ricotta as well.

Cheese curd is not cottage cheese. They are two very diffrent products. Cheese curd I think it is a very young cheese. It is a fresh cheese, and goes bad quickly. They taste really good.
