Basil Pesto

1/2 cup fresh basil leaves
1 tsp minced garlic
2 tbs pine nuts
1 tsp olive oil
60g parmesan cheese, grated
4 tbs light cream


Spray a pan with cooking spray, heat and brown the lamb steaks on both sides. Remove from the pan, keep warm.
Blend the basil, garlic, pine nuts, oil and cheese in a blender until well combined. Add the basil mixture to the pan with the cream. Gently heat and simmer for 1-2 minutes. Serve dobbed on top of the lamb.
