CHERRY WALNUT SLICE

3/4cup plain flour
1/4cup self-raising flour
1 tbs caster sugar
90g reduced-fat butter
1 egg, seperated
4 tsp water, approx
1/3 cup caster sugar, extra
100g glace cherries chopped
45g walnuts, chopped
1/4 cup custard poweder
1 tbs icing sugar

1.Heat oven to 180C
2.Sirt the flours into a medium bowl, stir in the sugar. Using fingertips, rub in the butter. Stir in the egg yolk and water and mix to a firm dough.
3.Press the dough evenly over the base of a 18cm x 28cm non-stick slice tin.
4. Beat the egg white untill soft peaks form. Gradually add the extra sugar until sugar is dissolved. Stir in the cherries, nuts and custard powder.
5.
Spread cherry mixture evenly over the base and bake for 20-25 minutes, or until lightly browned. When cold dust with icing sugar.
Serves 12....21/2 points

I use a slightly bigger tray and cut into 24 slices so is then only 1.25 points or you can have two for the 2.5
