CHICKEN STROGANOFF

600g skinless chicken breast cut into strips
1 clove garlic or 1 tsp minced garlic
1 cup sliced onion
3 cups sliced mushrooms
1 x 375ml can light evaporated milk
2 tsp beef stock powder
2 tblsp tomato paste
1 tblsp paprika
1 tblsp cornflour
salt and pepper to taste

Coat a large non stick frypan with cooking spray and brown chicken strips and garlic. Add onions and cook 2 mins. Place mushrooms in pan and cook further 2 mins. Add stock powder, tomato paste and paprika and stir well. Blend cornfloour into the milk add to pan stirring continuously until sauce boils. Salt and pepper to taste.
Serve with rice, noodles or couscous and vegetables. Serves 4
