Made this today guys and it is soooo yummy!! Sort of more like a steamed pudding type of consistency .. but easy to eat as a fruit cake too! and only one point per reasonable slice too!!

2 ¾ cups mixed dried fruit
1 C apricot nectar
1 tsp honey
1 C mashed pumpkin
1 ½ C self raising flour
1 tsp mixed spice
1 tsp baking soda.

Grease 2 10x20 cm loaf pans. Line the base.

Combine the fruit, nectar and honey. Bring to the boil, reduce heat and simmer uncovered for 3 minutes.

Transfer to a bowl and cool.

Stir in pumpkin, flour, spice and soda.

Cook in a moderate oven for 1 hour.

Cool in tins covered with foil.

Makes 20 slices (1 pt per slice)

I found the Apricot Nectar is Pak n Save .. It's sort of like Just Juice .. was in the canned fruit section, in a tin ... also in the section where they had boxed milks.

It's a fruit drink .. made in Aussie!

Hope you enjoy this recipe matey .. I really like it! and I loooovvveeee fruitcake! lol

Trish - this looks fantastic! I don't have a loaf tin, so I was thinking of using the mix to make muffins instead. Hope it works.

Trish - I made these into muffins. I was a bit worried at first as the mix was so thick, but they were great. Everyone at work loved them. This amount made 12 large muffins at 1.5 points each.
