Red curry Asian soup

1 tbs red curry paste (1.5 pts)
Half a cup lite coconut milk (2 pts)
Half a pumpkin (in biggish chunks)
Bok choy
Red capcicum, sliced
Snow peas
Fish stock
Lime leaves
Lemon grass
250g raw prawns (2.5 pts)

Heat pot and add curry paste and lite coconut milk. Mix. Add pumpkin pieces, and enough fish stock to cover the pieces well. Add lemon grass and lime leaves. Stir well

Simmer well until pumpkin is almost tender.

Add other veggies and simmer a few minutes. Add prawns and simmer another couple of minutes.

Remove lime leaves and lemon grass and serve.

Serves at least 2 people @ 3 pts each.

Depending on the amount of stock and veggies you add, it could serve several more for even lower points.

Add more curry paste if you like it spicier. remember to add the points for it!
