This is one of Jans recipes, printed it out in march but only just tried it, its really yummy so thought I would put it back up here in case anyone missed it.
1/4 butternut pumpkin
1 onion
1 clove garlic
1/4 cup uncooked rice(I used arborio)
1/2 400gm tin tomatoes
1 cup water (may add more if needed)
1 tsp chicken stock
1/2 tsp oregano
30g cheese,grated
50g ham sliced
* Peel and chop pumpkin into small cubes, add onion and microwave.
* Add all other ing. except last 2
* cook in microwave for about 12 - 14 minutes (I transferred to pan after this and and continued to cook on stovetop untill rice had softened properly and liquid absorbed)
* add ham and sprinkle cheese over top.
* grill untill melted
serves 1 @ 3.75 points

Hi guys
Just thought I would post the original recipe......which is sooooooo easy.......and doesn't need to be put on the stove....(maybe it was because of the aborio rice it needed the extra cooking on the stove?????.... but I just use normal rice and have no problem)..... but I found just popping in microwave so easy..........

HAM , CHEESE & VEGGIE RISSOTTO…………..
3.75 points with ham
2.75 points without
¼ butternut OR wedge of pumpkin (0)
1 small onion chopped (0)
1 clove garlic crushed or 1 tsp (0)
¼ cup uncooked rice (1.25)
½ x 400 gram can tomatoes (0)
1 cup water – add more if needed
1 tsp chicken stock (0)
½ tsp oregano (0)
50 grms ham sliced (1)
30 grams cheese, grated (1.5)
1. Peel and chop pumpkin into small cubes, add onion & Microwave.
2. Add all other ingredients, (except ham) and cook in microwave for about 12 – 14 minutes…….
3. At this stage add ham, and sprinkle grated cheese over the top. Pop under grill until melted……..
Serves 1 @ 3.75 points………
W/out ham @ 2.75
I do it without ham to save on points………. Bacon would be nice as well…………. But to be honest with you…. Never done it with the ham.
I often add ¼ to ½ cup of mixed veggies, (the ones without the corn) to it as well if I want it for dinner………..
ENJOY….. yummmeeeeeee and sooooo filling………..

Hi Jan - nice to hear from you, I was just wondering today how you were!
Just wanted to agree with Jan, it is really easy in the microwave and YUMMY. I had this a couple of times a week throughout winter - it is fabbo.

Thanks for that matey.....yea my idea for cooking is "quick and easy"...., so I try and find recipes that don't take much preparing and this one is great and so low in points.
I'm quite busy lately, with heaps of things going on in my life, plus still a bit nervous about the internet after what went on before, but I pop in every now and then.

I LOVE this recipe, and eat it regularly. I have added all sorts of veggies (yesterday I added fresh spinach and asparagus, celery and mushrooms).
I always use arborio rice, and often have to cook it a bit longer than 14 minutes but probably because I use a few more veg than the recipe calls for.
I usually use less cheese, too...

Goodness you have lost a lot Shashi.... I'm afraid my needle is stuck on the scales at the moment..... need a kick up the bum......lol.......any volunteers
