Modern CD writers/readers have the concept of multiple sessions on a disk. If you view the same disk via Windows Explorer, for example, you will only see the last session on a disk with multiple sessions.

The good news is that, using WatchetBurn! you can both write multiple sessions and retrieve files from any session on disk. So if you view the disk using the WatchetBurn! option Restore / Sessions then you will be able to access and restore a file from not only the most recent backup you ran but also from any preceding sessions. Or you can find & restore the files via the SQL searchable database.
