Subject: Mills Dinner Rolls

Mills Rolls

2 sticks butter PLUS melted butter, as needed
2 /3 cup granulated sugar
2 teaspoons salt
1 cup boiling water
3 packages dry yeast
1 cup warm water
2 eggs, beaten
6 cups all-purpose flour

Place the two sticks butter, sugar and salt in a large bowl. Pour boiling water over all and stir until butter is melted and sugar and salt are dissolved.
In a small bowl, dissolve yeast in warm water. Beat in eggs. Add to butter mixture and stir in flour.
Cover and refrigerate overnight. Shape into Parker House rolls and dip in melted butter, fold in half and place on a greased baking sheet. Let rise at room temperature about 1 1 /2 hours or until double in bulk. Bake at 450 degrees until brown. Brush with melted butter. Freeze what you don’t need. (If frozen, thaw 3 hours before baking.)
Makes about 3 dozen rolls.
