Subject: Tortillas

Tortillas

2 Cups flour
1 Tbl lard or shortening
1 tsp salt
1 tsp baking powder
Warm water

I throw everything but the water into the food processor with the dough blade on. Run the processor non-stop while adding warm water to be fed through the little hole in the vegetable pusher. When dough forms a large ball, stop adding water and stop processor. The masa should be smooth and pliable, not stiff or sticky.

Let rest covered 1 hour, divide into one inch balls (or larger, depending on how big you want the tortillas), roll flat on a well-floured surface and cook on a hot comal or cast iron pan about a minute and half each side.
