Subject: Melt in your mouth dumplings?

I'm looking for a dumpling recipe that is not so doughy.
I had Chicken and dumpling soup this pass weekend at a out of town restraunt that was to die for. They just melted in your mouth. I've checked here and I made the ones here before to no sucess even Paula Deans. This dough was like tiny squares of puffy dough and like a pale yellow color. Yum Oh!
Any help or recipe would be apperciated..

It could be puff pastry used for the dumplings. Simmered in broth the puff pastry gets tender and puffy. I like the soft bread texture dumplings. If you find the recipe to the dumplings please post it.
