Some of the resorts catering night fishing and squid hunting. About 200 riggit for the boat. Try Redang Bay Resort... I think most of the Resort operators have contacts for night fishing.

can do squid hunting from any jetty????

Redang island is protected, it is declared as a Marine Park. The Malaysian Department of Fisheries patrols Pulau Redang and it sister islands. It is an offence to fish or hunt for any marine life. Even touching some of the marine species can cause undue stress and they can died from it, corals are very susceptible.
If you really want to hunt for squids, the operators will take you out of the Marine Park zone, some 3 or 4 kilometers from Redang island where you can fish or hunt for sotong. Best to check with a few of the resorts. Coral Redang, Redang Holiday, Redang Bay, etcetra. You can email them for cost and what fishing programmes they have - day and night, fishing spot and what you can expect to catch.
Recently, in the Straits Times, there was article about fishing and sotong hunting(?) off the kalongs in Malaysia. Don't know the location but I bet it not as far as Redang. May be closer to Mersing or Tioman, may be even Johor Bahru.
